A couple of weeks ago we gathered your favourite dishes on the Riviera; this week, we’re going to give you the recipes for how to make these 7 delicious meals chez vous. Let’s get started!

Socca

Traditionally, Socca is a popular snack among fishermen and early morning workers in Nice. Imagine the tantalizing aroma of chickpea fritters cooking in a traditional wood-fired oven. The result? Crispy on the outside, yet soft and flavourful on the inside. It is a traditional dish that people on the French Riviera have passed down through many generations, and it is a shining example of how good cuisine can be prepared simply.

Salade Niçoise

If you’re looking for a fresh and healthy dish to serve, Salade Niçoise is a classic choice, and very easy to prepare. The salad is beautifully composed, with each ingredient contributing its own unique texture and taste.

Pissaladière

While the Pissaladière is a traditional French dish originating from the city of Nice, it is believed to have been influenced by Italian cuisine due to the proximity of Nice to Italy. The name “pissaladière” is derived from the Provençal word “pissalat,” which refers to a traditional anchovy paste used in the preparation of this dish.

The recipe is really simple, with 3 main ingredients that are the stars of the show – caramalised onions, anchovies, and olives!

Daube Niçoise

A comforting and hearty dish that is perfect for colder weather or special occasions, Daube Niçoise is a beef stew that usually tastes better after marinating overnight (but if you’re in a hurry, 3 hours will do too).

Farcis

The word “farcis” translates to “stuffed,” and that’s exactly what this dish is all about. Farcis refers to a variety of vegetables, such as bell peppers, zucchini, tomatoes, and eggplants, that are hollowed out and filled with a flavorful mixture of ground meat, herbs, vegetables, and sometimes rice. In this recipe, we’re going to attempt it with large bell peppers.

La Tarte Tropézienne

To finish off, we’re going to end on a sweet note! The famous Tarte Tropézienne, once a well-kept secret, now available to be made in your own home. This one is slightly trickier but we promise it’s worth the effort as it’s TROP bon!
