Ratatouille

This rustic vegetable stew was created as a way to utilise an abundance of garden vegetables during the harvest season. Today, it continues to captivate food enthusiasts with its colourful presentation. Here’s the recipe for a 4-person party:

Ingredients Ratatouille

1 large aubergine (or eggplant)

2 zucchinis (or courgette)

1 red bell pepper

1 green bell pepper

1 onion

3 cloves of garlic

3 tomatoes

3 tablespoons of olive oil

1 bouquet garni (thyme, rosemary, bay leaves)

Salt and pepper to taste

How to make Ratatouille

Wash and chop the zucchinis, aubergine, and green and red bell peppers into medium-sized cubes. Quarter the tomatoes and thinly slice the onion.

In a frying pan, drizzle some olive oil and sauté each vegetable separately for about 5 minutes to add some colour. Start with the bell peppers, then add the aubergine, zucchinis, onions, and finally, the tomatoes, which you’ll cook together.

Once all of the veggies are cooked, add the tomatoes and onions, reduce the heat, and mix well.

Add the bouquet garni and season with salt and pepper, then cover and let it simmer for 40 minutes, stirring regularly.

Around 10 minutes before it’s done, add crushed garlic cloves and cover again. Don’t hesitate to taste and season again according to your preferences.
