La Tarte Tropézienne

To finish off, we’re going to end on a sweet note! The famous Tarte Tropézienne, once a well-kept secret, now available to be made in your own home. This one is slightly trickier but we promise it’s worth the effort as it’s TROP bon!

Ingredients La Tarte Tropézienne

For the dough:

    • 2 1/4 cups all-purpose flour

    • 1/4 cup granulated sugar

    • 1 teaspoon active dry yeast

    • 1/2 teaspoon salt

    • 1/2 cup unsalted butter, softened

    • 2 large eggs

For the filling:

    • 1 cup heavy cream

    • 1 cup powdered sugar

    • 1 teaspoon vanilla extract

    • 1/2 cup mascarpone cheese

For the topping:

    • Pearl sugar

    • Sliced almonds (optional)

How to make Tarte Tropézienne

In a mixing bowl, combine the flour, sugar, yeast, and salt. Add the softened butter and eggs. Mix until a dough forms. Transfer the dough to a floured surface and knead for about 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 375°F (190°C).

Punch down the dough and divide it in half. Roll out each portion into a circle to fit a greased tart pan. Place the dough circles in the tart pans and prick the bottom with a fork. Let them rise for an additional 15 minutes. Bake the tart crusts for about 15-20 minutes, or until golden brown. Let them cool completely.

In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in the mascarpone cheese.

Split each cooled tart shell horizontally. Spread a generous amount of the cream filling on the bottom half of each tart shell.

Place the top half of the tart shell on the filling and gently press down. Sprinkle the top of the tarts with sliced almonds and pearl sugar, if desired.

Refrigerate the tarts for at least 2 hours before serving to allow the flavors to meld together. Slice and serve chilled. Enjoy!
