Daube Niçoise

A comforting and hearty dish that is perfect for colder weather or special occasions, Daube Niçoise is a beef stew that usually tastes better after marinating overnight (but if you’re in a hurry, 3 hours will do too).

Ingredients Daube Niçoise

– 2 pounds beef stew meat, cut into chunks

– 4 tablespoons olive oil

– 1 onion, chopped

– 2 carrots, sliced

– 2 garlic cloves, minced

– 1 cup red wine

– 2 cups beef broth

– 2 tablespoons tomato paste

– 2 bay leaves

– Salt and pepper to taste

– Chopped fresh parsley for garnish

How to make Daube Niçoise

In a large pot, heat the olive oil over medium heat. Add the beef and brown it on all sides.

Add the onion, carrots, and garlic to the pot. Cook until the onion is softened.

Stir in the red wine, beef broth, tomato paste, bay leaves, salt, and pepper. If you have any brown burnt bits at the bottom of the pot, scrape them off with your spatula (this is the best bits!).

Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 2-3 hours, or until the beef is tender.

Remove the bay leaves before serving. Garnish with chopped parsley. Tip from a chef’s grandma – drop a square of dark chocolate in at the end to really bring all the flavours together.
